Izumibashi Sake Brewery was founded in 1857, during Japan's Edo period. Nestled in the heart of the Ebina region, Izumibashi has long taken advantage of the region's natural bounty, from the abundance of land for rice cultivation to the natural flow of water from Mount Tanazawa.
Today, the brewery continues to follow traditional rice growing and sake making techniques. These methods have been passed down from generation to generation.
The "Akatonbo", the design on the sake label, reflects the image of a dragonfly hovering over the rice fields of the Izumibashi Sake Brewery. Visible from the brewery, Mount Oyama, a landmark respected by the local people, is one of the Tanzawa mountain ranges, where mineral-rich water flows. This water source lends itself to the production of clear, umami-rich sake, which brings out the full flavors of the dishes with which it is paired.
Izumibashi Junmai Daiginjo Rakufumai is the premium sake of the line. This sake is brewed from Ebina's raku-fumai rice variety and the polish rate of the rice is 35%. It is one of Izumibashi's sweetest and most aromatic sakes.
