The Willett distillery was founded in Bardstown by Thompson Willett in 1936. After being mothballed in 1980, it reopened in January 2012 following major renovation work carried out by Martha Willett and her husband Even Kulsveen. The distillery is equipped with a stainless steel column still and a stocky pot still with a very long lyne arm and produces bourbons and rye whiskeys known for their finesse and complexity. This extroverted bottling is seeped in flavours and aromas of corn that are characterised by their moving classicism. It should be tasted the way one reads a gripping book, from the first to the last page, without stopping.
Nose : refined, balanced. Corn, mandarin and beeswax open the tasting with an incredibly noble expression. Allowed to breathe, more floral tones (geranium, hyacinth) are revealed alongside powdered notes of cocoa and spices.
Appearance : Vieil or à reflets ambrés.
Palate : clean, vibrant. The attack reveals its own cereal notes, as well as vanilla and fruit (apple jam, quince jelly). Guided by liquorice, the flavour palette wavers between cinnamon, new oak and nuts (cashew, almond).
Overall : long, radiant. Notes of chilli, medicine (mustard poultice) and camphor draw the tasting out. Lovely salt and root flavours (gentian) appear at the end of the finish. Much later, on the retro-nasal olfaction, a bay leaf infusion brings the taste buds timely refreshment.
