Produced slowly and according to traditional methods, Ocho is the first tequila to indicate the vintage and the exact field where its agaves are grown. Each batch comes from a different field, or “Rancho”, which has its own region-specific characteristics.

La Estancia field is located in the San Diego de Alejandria municipality, around 35km northeast bound of Los Alambiques Distillery as the crow flies. The field size is almost 8ha (17 acres) with 34,620 agave plants, at an average of 1,875 meters (6,095 feet) above sea level. The terrain is slightly hilly towards the south, not the characteristic red soil of the highlands of Jalisco, but gray with the presence of calcium-rich limestone and a good level of organic matter. The agave was planted in rows oriented east to west#P,& at the moment of harvest, the plants were reaching its peak of maturity, with piñas weighting 22kg (50 pounds) average and a sugar content of 280-300g/kg, way higher than the average for tequila industry, which is 225g/kg.
