LARMES DU LEVANT LOV(SIC) 3 Antipodes

Named Lov(Sic) 3, this limited edition is the result of a collaboration between Grégoire Bœuf, director of the sake brewery Les Larmes du Levant, located in the Loire department, and La Maison du Saké. Developed in 2018 from the Yamada Nishiki rice variety polished to 70%, this sake was aged until June 2021 in a barrel from the Dargaud & Jaegle cooperage, then continued its maturation in a barrel that had contained a Burgundy wine vinified by Koji Nakada, producer in Gevrey-Chambertin. With an absolute freedom of tone, the aromatic and gustatory palette of this remarkable sake constantly evolves between originality and classicism, in a perfect balance.
