The first whisky from the Distillerie de Paris is finally here! It boasts original notes of malted cereals, light tobacco, smoke, peat and citrus fruit. It is made with five different malts (blond, smoked, peated, white and toasted). The malt is fermented for around 15 days using yeasts carefully selected by Nicolas Julhès. It is then matured and reduced at the same time in 100-litre barrels, with the added dynamics of frequently changing the barrels. The method involves ageing and reducing the cognac so as not to crush the grain and obtain a textured and chiselled spirit._x000D_
