Equipped with eight wooden washbacks and two stainless steel washbacks where fermentations can last between 55 and 120 hours, Islay’s largest distillery opened its brand-new visitor centre in the summer of 2022. Now at its peak, this version has kept all of the freshness of its prime youth. Developing to the rhythm of a peat that is at times very present and at others more diaphanous, the flavour and aroma palette favours elegance over power, as is typical of Caol Ila’s style.

Heavily Peated

Nose : Fresh, distinguished. Aromas of sleet, cut grass, mint and salt rival the intensity of a delicate peat. Allowed to breathe, balms envelop the palate in a very typically Caol Ila manner.

Appearance : Or vert.

Palate : Lively yet delicate. Unlike the nose, the attack combines peat and smoke with white fruit (peach, pear, apple), strong spices (clove, nutmeg), vanilla pod and coconut. The very marine mid-palate calls on seaweed notes and aquatic plants (aster).

Overall : Long, intense. Saturated with empyreumatic notes of ash, the finish is creamy (custard tart, almond), vanilla and fruity (William’s pear). Refreshed with lime and verbena, the after-taste offers a glimpseof dry peat and sprouted barley grains.
