BIMBER 2019 Fully matured in ex-Oloroso cask Antipodes

Nose : Rich, deep. <br>On the first nose, notes of almond, lemon, walnut and honey all flowers are covered by fleur de sel. On aeration, noble spices (cardamom, clove, nutmeg) and precious wood aromas (beeswax, oak) conclude a particularly concentrated olfactory sequence. Chocolatey and fruity (apricot, fig, mirabelle plum), the aromatic palette gradually becomes camphorated and floral (lily of the valley, white lilac).

Palate : Clear, racy. <br>Covered by a thin film of salted butter caramel and vanilla pods, the attack on the palate is at the same time infinitely malty and lemony. Very dense, the mid-palate oscillates between medicinal (balsam), peppery, exotic (pineapple) and candied (pear, plum) notes. Spicy (Espelette), the end of mouth has a very fried touch (shortbread).

Overall : Long, heady. <br>Barley grains in profusion constitute an extremely powerful link between the mouth and the beginning of the finish. Very fruity (pear, apple, yellow melon, walnut), the aftertaste is also unctuously vanilla. The retro olfaction is honeyed (acacia, lime), resinous (pine, cedar) and praline. The empty glass restores to the comma the medicinal and malty character of the aromatic and gustatory palette.
