Pete Bignell not only grows his own rye on the farm, he has also built his own stills, which are fuelled directly by waste wood chip oil. This farm distillery operates almost entirely in a closed circuit, with bio-oil as the only input and whisky as the only output.

On the nose, it's immediately clear that this glass contains a powerful whisky full of character. Farmyard aromas introduce rye dough, spicy vanilla, popcorn and warm gingerbread. These flavours are amplified on the palate by burnt sugar and salted caramel that cascade into rye beer, shortbread and cloves. The spices linger on the finish. This is a powerful, intense and unique product, produced by Tasmania's folk distilling hero.
