It all began in 1984 in Hérisson, a small village in the heart of France, where Monsieur Perrier, also known as Monsieur Balthazar, carried out the first distillation. David Faverot took over from him in 2012, continuing the style and improving the recipes. Distilled in an iron still, corn, barley and rye are harvested locally and form the basis of his brew. A true enthusiast, he is constantly seeking to improve his micro-distillery. For the sake of complexity, David likes to combine different types of wood from different origins for the ageing of his spirits (Cognac, Sauternes, new Tronçais barrels, etc.).
