Origin of the fruit: After pressing our grapes, for the vinification of the Champagne des 6 Cépages, we separate the pomace from each grape variety in order to eliminate the stems.
Production: During the harvest, the de-stemmed Champagne marc is stored by compacting it. The marc must be hermetically sealed to ensure fermentation and prevent oxidation, which is why we use fibre tubs. containers of around 20 hectolitres
containers.
Distillation: 5 traditional copper pot stills run from mid-November to mid-February for the distillery's total production. The 6 grape varieties are distilled separately: Arbane, Petit Meslier, Pinot Blanc, Chardonnay, Pinot Noir and Pinot Meunier. During the re-distillation, we make a selection of the heart of the toast.
Ageing: The 6 marc Champenois from 6 grape varieties obtained are aged in barrels for a long decade in the Maison Moutard cellars.
Speciality: intimate production - Brut de fût Tasting Advice: In the style of the 1930s in Bistrots, with Eau de Selts or a splash of sparkling water. As a digestive at room temperature.
