The No.4 Char is also known as the ?lligator char.?This is because following the charring, the interior of the oak wood staves has the rough, shiny texture of alligator skin. The bonus of the alligator char : these deep fissures also allow the spirit to seep back and forth into the interior of the wood, allowing more interaction with the uncharred oak which gives brown sugar notes as well as intense smoky and spicy aromas.
