Founded in 1825 under the name Glenforres and renamed Edradour in 1837, this distillery was acquired in 2002 by Andrew Symington, founder of the Signatory Vintage independent bottling company. Since 2018, its single malt has been produced in the brand-new, adjacent distillery. An exact replica of the original, this one is equipped with a Morton wort cooler, a unique model in Scotland, eight Oregon pine washbacks, a 4,200-liter wash still, and a 2,200-liter spirit still. Wonderfully oxidative, this version is sure to appeal to fans of old-style sherry cask whiskies. Its aromatic and flavor profile is beautifully nuanced, brimming with a variety of fruits whose diversity is matched only by their eloquence.

Nose : Rich, creamy. A delightful rancio (cherry in brandy), dark chocolate, cinnamon, citrus zest, beeswax, heather honey, and dried fruits (date, fig, raisin) combine to create an aromatic profile that is both warm, indulgent, and resplendent with maturity.

Appearance : cuivre orangé.

Palate : Clear, lively. Refined, the flavor profile reveals vanilla and roasted notes (coffee). A delicate layer of salted butter caramel gradually coats the palate. Over time, the dried fruits from the aromatic profile make a strong comeback. This indulgent interlude lingers with flavors of curry and infused herbs (chamomile, linden).

Overall : Long, full-bodied. Refreshed by citrus zests (lemon, orange), the tasting evolves towards more herbal (tobacco, straw) and spiced notes (clove, Espelette pepper). Some exotic fruits (mango, persimmon) then add vibrancy to a resinous aftertaste (pine, eucalyptus).
