Yanagita is the oldest distillery in Miyakonojo. It was founded in 1902 and is located in the distant outskirts of Miyazaki. It had already moved the lines in 2005 by making agreements with local and committed producers for the cultivation of traditional barley (the "Miyazaki Hadaka" variety, which has almost disappeared from the region, for example) or for sweet potatoes of the "kogane sengan" variety, which it lets mature so that the flavours are exacerbated. But it was on 6 April 2009 that the distillery was transformed and restructured, and everything was put in place to make production more fluid.
Akakage 2020 is a barley-based shochu produced by the Yanagita distillery and reduced to 25%. The barley shochu is made in a blessed place for shochu making, using a large amount of pure water due to the abundant spring water that springs from the Kirishima and Takibe mountain ranges. By adjusting the climax of the moromi boil and its still, a new facet of barley shochu was discovered. Barley shochu was born in 2004 after several trials and errors aimed at achieving a simple and mild taste. It has a pleasant, slightly sweet taste with the full flavour of wheat, and is appreciated for its palate-pervading flavour. It has relatively strong aromas but retains a very light taste.
