Aromas, tastes and flavours form a somewhat mysterious and often wonderful world. And yet, although all the stages in the formation of flavours have been clearly identified, there is still a great deal that is empirical and unknown about the nature of the interactions. We haven't mastered everything yet, and that's just as well. The proof is in the endless debates about the impact of terroir, the quality of water, the influence of climate, and many other factors that make each spirit unique. And not just because each cask is aged separately. A fast-food chain once said: Taste is us. It could also be said that taste is, above all, us.
