This is the paradox of today's spirits world. On the one hand, global demand is stretching stocks. On the other, there have never been so many venerable spirits available to (wealthy) connoisseurs. Cognac is no stranger to superlative bottlings, as much for their prices as for the eaux-de-vie - some of them centuries old - that go into them. Whisky is no exception. If, for a long time, a 40-year-old whisky represented a kind of unattainable grail (as much for the connoisseur as for the distillery), much older whiskies are now available. This issue of Whisky Magazine & Fine Spirits is therefore devoted to great spirits, whether in terms of their age or the mark they have left over time. We look at whisky auctions, the troubled history of absinthe and the trend towards aged cocktails. After wine, the small world of spirits is probably the one that best accommodates the passage of time.
