Initiated in 1941 by Gilbert Castan, the Castan family adventure, famous for its mobile red copper still, has been built up over 3 generations. The family, based in Villeneuve sur Vère in the Tarn department of France, cultivates barley and rye (160 hectares in all) as well as vines (7 hectares) from which they make renowned wines, notably under the Gaillac appellation.
The Castan distillery began producing its whisky, Vilanova, in 2010.
To produce his single malt, Sébastien Castan uses two mobile stills dating from 1929 and 1931, which were previously used to distil fruit.
The variety of starch-rich barley brewed on site is grown on the family land surrounding the distillery. In fact, almost every stage of production is carried out on the distillery site, from growing the barley to brewing, distilling, ageing and bottling.
Impressively powerful and rich, the aromatic and taste palette of this version reveals the smoky, animal, empyreumatic, medicinal and saline nuances of the omnipresent peat.
The influence of ageing in a cask that has contained a white wine from the Pacherenc grape variety is most obvious on the olfactory level.
