Quetsche Tilquin à l'ancienne is the sublime result of fermenting fresh organic plums (Prune de Namur or Quetsche véritable d'Alsace, of the simple altesse variety) in a blend of 1, 2 and 3 year old lambics for 4 months in barrel and 3 months in bottle. This orange-coloured beer has everything that makes the reputation of the greatest fruit lambics: a sweet, acidic profile, a wild nose (leather, oak), rounded on the palate by the plum fruit and a low fizz, with a slightly dry finish.
A resolutely acidic and complex tasting beer, perfectly suited to gourmet meals (rabbit, lamb) or several years' cellar ageing, which will further round out its profile.
