Lambic is a beer brewed with malted barley and wheat, cooled after brewing in the open air to be inoculated by ambient yeasts, then aged in oak barrels.
Tilquin's Airelle Sauvage à l'ancienne is the sublime result of fermenting fresh cranberries in a blend of 1, 2 and 3-year-old lambics for 4 months in the barrel and 3 months in the bottle. This orange-red beer has everything that makes the reputation of the greatest fruit lambics: a sweet, tart profile, a wild nose (leather, oak), rounded on the palate by the cranberry fruit and low fizz, and a slightly dry finish.
A resolutely acidic and complex tasting beer, perfectly suited to gourmet meals (rabbit, lamb) or several years' cellar aging, which will further round out its profile.
