Mirabelle plum brandy is obtained by fermenting the fruit with its stones for 3 to 4 weeks. After fermentation
fermentation, the fruit purée is stoned before being left to rest for 8 weeks to further develop
the flavours. After distillation, the eau-de-vie is stored in stainless steel vats before being reduced in strength using Steige spring water.
