NINKASI went to the Isère region to meet Nicolas from Ferme de la Maye (38), where he sourced intense, fruity ratafia cherry juice.
It is then cold-aged in oak barrels made from Morgon wine (a red wine from the Beaujolais region). The wood releases its aromas and gives it intense, vinous notes.
