KILCHOMAN Inaugural Release

Nose : lively, refined. On the initial nose, an intense smoke covers the aromatic palette. Notes of slate, citrus fruit, camphor (lemon, grapefruit), vanilla and liquorice gradually pierce through this veil. Allowed to breathe, the peat becomes more present. It is rooty (gentian) and saline. In the background, tiger balm and clove highlight its medicinal, spicy character.

Palate : sharp, elegant. After a very lively attack in which peat plays the leading role, the palate becomes increasingly unctuous. Next, vanilla, juicy pear and white grape feed a very fresh mid-palate. At the end of the palate, agave, cut grass and aromatic plants (sage, savory) bring out its vegetal character.

Overall : long, very peaceful. At the start of the finish, dark chocolate, lichen and a hint of seaweed bring incredible nuance to a now oily and cocoa peat. Very mineral (slate), clearly reminiscent of a mezcal (Tobala agave). The retronasal olfaction wavers between Mirabelle plum jam, fresh walnut, cigar smoke and grilled meat. The empty glass is intensely floral (lily, lilac, lily of the valley), exotic (banana, pineapple) and empyreumatic (pine, cedar).
