HEIGHT OF ARROWS Funk Gin

After the launch of its first gin Height of Arrows in 2021, the Holyrood distillery in Edinburgh had created two new gins Heavy and Bright in line with its philosophy that "less is more". Namely expressions stripped to the essentials and containing only juniper, beeswax and salt giving them a lot of texture and a beautiful full-bodied flavor. The latest in the series, Funk, follows this line. In the Balkans, it is common to ferment juniper to make a lemonade substitute called Smreka. Funk is inspired by this, juniper, salt and lemon are left to naturally ferment for 28 days before being distilled with beeswax. The result is a creamy and punchy gin!
