HEIGHT OF ARROWS Funk Gin Mignonnettes

After the launch of its first Height of Arrows gin in 2021, the Holyrood distillery in Edinburgh created two new gins, Heavy and Bright, in line with its "less is more" philosophy. These were stripped down to the essentials and contained only juniper, beeswax and salt, giving them plenty of texture and a nice full-bodied flavour. The latest in the series, Funk, is in this vein. In the Balkans, it is common to ferment juniper to make a lemonade substitute called Smreka. Funk is inspired by this, the juniper, salt and lemon are left to ferment naturally for 28 days before being distilled with beeswax. The result is a smooth and punchy gin!
