BELLEVOYE NOIR, the great peaty whisky of France.
Peat is produced by the decomposition of moss, sphagnum or heather by microorganisms in humid and oxygen-poor environments over several thousand years.
Because of its high moisture content, peat generates thick, greasy smoke that dries the green malt that has been moistened beforehand to germinate.
It gives aromas of iodine, liquorice, chimney fire, ash and cloves.
The scale used to measure the amount of peat in the malt is the p.p.m. (parts per million) of phenolic acids. The malt grains used for BELLEVOYE noir are around 45 p.p.m.
Triple malt is a blend of three peated single malt whiskies.
Profile: Complexity, volume, balance and length.
Ageing: 5 to 8 years in French oak barrels in each of the 3 selected distilleries. A second post-assembly maturation (BELLEVOYE cellar - Charente) between 9 and 12 months (new French oak barrels).
