Gilles Leizour’s son-in-law David Roussier took over at the Warenghem distillery in 2009 and immediately called on the expertise of renowned specialist Dr. Jim Swan, who had previously worked with Kavalan, Penderyn and Cotswolds. On Swan’s advice, the stills were modified and the systematic use of peat abandoned.

This version was matured for 7.5 years in a first-fill bourbon cask and finished for 4.5 years in an Oloroso sherry butt from Spanish oak. The deeply harmonious palette of flavours and aromas reveals smooth yet refreshing sequences made up of fruit, tangy notes and chocolate.

Nose : charming, deep. The aroma palette is deeply mature and opens with Corinthian raisin, grilled walnut and dried apricot. Becoming increasingly heady (gillyflower) and spicy (cumin), it is then gradually covered in a thin layer of salted butter caramel.

Appearance : Acajou.

Palate : lively, dynamic. Tangy citrus fruit juices (orange, grapefruit) open the refreshing palate. Chocolate notes appear before the same apricot found on the nose, pepped up with flavours of marmalade and quince jelly.

Overall : long, full. The finish opens with a handful of black fruits (bramble, blueberry), as lavender honey softly envelops the taste buds. A beautiful shaded (lime blossom, pine tree) and vegetal (coriander, parsley) sequence brings stunning rhythm to the tasting.
