This shochu is made with the orange colored sweet potatoes "Hamakomachi". The raw sweet potatoes are stored and saccharified for 2 months before being prepared.
Consequently, this imo shochu coming from a single vat will give to the aeration with a light dilution a "citrus perfume", of candied apricot pie. On the palate, the more present matter with oily notes brings out aromas of Earl Grey tea. A lively and complex shochu.

Yanagita is the oldest distillery of Miyakonojo. It was established in 1902 and is located in the distant outskirts of Miyazaki.
Tadashi Yanagita, the owner, had already moved the lines around 2005 by making agreements with local and committed producers for the cultivation of traditional barley, the variety "Miyazaki Hadaka", almost extinct in the region, or for the sweet potatoes of the variety "koganesengan" that he lets mature so that the flavors are exacerbated.
But it was on April 6, 2009, that he really began to give full rein to his personal adventure. This is how he is reconfiguring the entire distillery, thinking of the day when his daughter might want to do the same.
