The Ohishi distillery is the number one distillery in the Kuma-Shochu area, as it is the closest to the source of the Kuma-Gawa river. Thanks to the well-defined seasons, this region is the ideal place for rice cultivation. The Ohishi Distillery is now the largest of the small distilleries, producing over 250,000 litres of shōchū per year. Some of it is aged in brandy and then sherry casks. This blend results in a unique aromatic and taste balance.
Ohishi is the distillery that caused the great upheaval in the early seventies. It tried to innovate by starting to age its shochu in oak barrels and casks. It also innovated by using barrels from the Ariake cooperage when it was founded in 1976.
Resena is an Ohishi shochu made from 100% rice and reduced to 25%. Located in the most upstream part of the Kuma-Shochu distilleries, the brewery uses the purest water. Due to large seasonal temperature variations, shochu is produced with high quality sake rice grown in local rice fields. A reduced pressure distillation, using the new KF7 yeast, will give fruity aromas and umami reminiscent of apple notes.
