The southern end of our farms is nestled tightly between the coastal road and the marshy mangroves of Westerhall Bay, in front of its now ruined distillery.
Here, the moisture-retaining soils, enriched by the heritage of coconut and cocoa trees, provide a fertile, verdant terroir.
For this rum, we harvested the sucrose-rich variety we call Clean Ester, which is found in the terroir known as Old River.
