Founded in 1949, the Clarendon distillery is equipped with a 20,000-liter Vendôme pot still installed in 1998 and, since 2009, with a second pot still of Indian origin christened “Calendria-i” with a capacity of 25,000 liters. Produced by double distillation, this version was first aged for 18 years in bourbon casks in the tropical climate of Jamaica, before being refined for 5 years in cognac casks in the Maison Ferrand cellars. With an ester content of 490 grams per hectoliter of pure alcohol, its aromatic and taste palette takes on superb autumnal hues over time. Particularly shimmering, this chromatic evolution constitutes the fourth tasting stage.

Nose : rich, concentrated. A blend of candied lemon, pomade, agave honey and roasted pineapple, the aromatic palette is as varied as it is intense. With aeration, it finds its equilibrium, evolving towards exotic registers brimming with vitality (banana, pineapple, kiwi).

Appearance : vieil or soutenu.

Palate : ample, delicate. Vanilla, lemony, creamy, infused (chamomile) and juicy (apple, pear), the palette of tastes displays a chromatically diverse range of yellows. This sunny sequence continues with flavors of flan and rice pudding.

Overall : long, fluffy. On the palate, the tasting continues with chocolate, spicy (candied ginger) and oily (fresh walnut) tones that tend to narrow the taste buds. Tertiary, the retro olfaction invites us to savor porcini mushrooms and roasted chestnuts. The empty glass is both praline-flavored and preciously woody.
