After numerous trials conducted in secret by Fritz Maytag and his team, the first cask of rye whiskey distilled in a small copper pot still was filled for the first time at the very start of 1994. The second act in our trip to California, this version distilled in 2015 reveals a darker palette of colours than those found in the 2016 single cask. The flavour and aroma paletteis peppered with chocolate, rancio and empy- reumatic sequences and has gained considerable maturity while still maintaining abundant tropical freshness.

Nose : Full, unctuous. Chocolate, liquorice and grains (rye) open the aroma palette, which then reveals rancio (roasted mango), medicinal (arnica), vegetal (lucerne, essential oils) and empyreumatic (apricot stone) notes. Coffee beans perch delicately above this ensemble of aromas.

Appearance : Cuivre orangé.

Palate : Clean, taut. The palate reveals tertiary (dried leaf, chestnut), heady (tuberose, geranium) and jam (orange, apricot) flavours, and beams with maturity. Becoming increasingly smoother, honey (pine tree, heather), roasted (coffee) and herbal (black tea) notes then develop.

Overall : Long, concentrated. The flavour palette is incredibly balanced and now offers delicious fresh figs, melon, guava and wild strawberry. Creamy cocoa bean, grated ginger and toffee spread across the sides of the palate.
