LARMES DU LEVANT La Vague

Les Larmes du Levant is France's first Sakagura (sake "brewery") entirely dedicated to the production of sake. The raw materials - rice, kôji and yeast - all come from Japan, and the brewery is located in Pélussin, in the heart of a region renowned for its wine-growing excellence, surrounded by the hillsides of Condrieu, Côte-Rôtie and Saint-Joseph. Les Larmes du Levant produces only Junmai: sakes containing only rice, water and yeast, nothing else. The company's vision is to work with the purest respect for Japanese techniques, always keeping in mind the "spirit" and mentality attached to this age-old know-how, while taking care not to fall into mere duplication. The brewery is also very attached to French culture, to its excellence in gastronomy and oenology, and remains well aware of the notable differences in taste, landmarks and references between our two cultures.
Le Vent is an elegant, smooth sake with notes of white fruit. Le Vent is undoubtedly the most subtle and delicate sake in the range.
