Created with the latter variety, this venerable expression is impressively fresh and complex.
Pushing back the ravages of time, the very evocative and original palette of flavours and aromas wavers between fruity and herbaceous tones that form a remarkably clear picture of Normandy’s wooded countryside.
Nose : delicate, fresh. Straightaway, aromas of stewed apple and cider draw clear parallels with a Pays d’Auge calvados. Allowed to breathe, apricot, candied lemon and lime blossom closely interweave and bring lots of tone.
Appearance : Vieil or soutenu.
Palate : lively, dynamic. Continuing on perfectly from the nose, the flavour palette adds powdery flavours (ginger), vanilla, liquorice and menthol. Then, returning to the Normandy landscape, chunks of apple release their deliciously tangy juices onto the taste buds.
Overall : long, svelte. With both medicinal tones (ointment, camphor) and liquorice, the finish becomes herbaceous (cut hay, lucerne) and fruity (grapefruit), and incredibly fresh. On the retronasal olfaction, nutmeg and ginger spread across the sides of the palate.
