In the vast concrete cellars of the Kavalan distillery, the casks are stored on different levels according to their size, to ensure the best possible maturation conditions. The smallest casks are placed on the lower levels, and the largest on the upper levels, where the warmer ambient temperature encourages exchanges between the distillate and the wood. This sunny version is the third stage in the Kavalan saga. With a charming freedom of tone, its character is both sensual and pastry-like, its aromatic and taste palette evolving airily from fruity registers to floral sequences.

Nose : Rich, suave. Pastry-like (flan, crème brûlée, almond), the aromatic palette also has a pleasant fruity freshness (apple, pear...). Then, aromas of cardamom, sandalwood and tobacco (Havana) add depth and nobility to the olfactory space.

Appearance : vieil or soutenu.

Palate : Creamy, full-bodied. Minty and lemony, the palette is wonderfully fresh and tangy. Further toning up, it continues with flavors of orange, ginger and pepper. Then, little by little, the finish acquires a lovely floral dimension (lavender, poppy).

Overall : Long, unctuous. Initially, notes of tobacco, banana and laurel coated with a thin layer of salted butter caramel take over a taste space that becomes increasingly gourmand (Partis-Brest). The sunny aftertaste is galvanized by the presence of yellow lemon zest.
