Located in northeastern Taiwan's Yilan county, the Kavalan distillery was founded in 2005 by businessman Tien-Tsai Lee. On March 11, 2006, the first drops of the new make flowed from the stills. The first stage in the quadrilogy devoted to Kavalan in this Créations 2025, Foundations catalog, this version reveals this single malt with its remarkably fine charcoal features. Particularly complex, its palette of aromas and flavors shines out in the abundance and diversity of its fruity notes.

Nose : Racy, slender. Scents of precious woods, nutmeg and blood orange make up an initial aromatic sequence of great nobility of expression. With aeration, red fruits (raspberry), more exotic fruits (mango) and an infusion of verbena refresh the ambient atmosphere.

Appearance : acajou foncé

Palate : Rich, precise. At first, greedy black fruit flavors (cherry, blackberry) provide a rich, creamy palette. This then evolves into more honeyed (acacia), floral (violet, lavender), herbal (lemon balm) and camphorated tones.

Overall : Serene, velvety. On the finish, strawberries, melon and pineapple enrich an already rich fruit basket. Over time, powdery (cocoa), roasted (coffee) and creamy (mascarpone) flavors gently coat the edge of the palate. Peppery, the aftertaste is also medicinal (mustard seed).
