Aged in the Middle Ages cellar of an old part of Clermont-Ferrand, in asort of a volcano magma dig, in the oak barrels with the transparent glass tops made by François Frères, one of the prestigious Burgundy cooper’s shop, which produces the barrels for the famous Romanée Conti. The barrels are thermically treated and heated to produce different essences for the best aging of the product inside. The final assemblage is done between different barrels and some wicker bottles that we use. V.P. stands for « vieillissement perpétuel » or« perpetual aging », which means that we don’t empty completely the barrels, we are refilling them as needed like in solera.
An exceptional liquor, produced at a quantity of about one hundred bottles per year.
