Over-ripe for more than a month, our "williams pears" are selected and sorted daily to ensure the best concentration of sugars and aromas. This is called passerillage. We manually remove the tails (peduncles), the eyes (calyxes), all the pips and any scabs or dubious development, with the aim of preserving the flavour of the pear. Discernment and cleanliness go hand in hand during the crushing process, to ensure that fermentation starts quickly. With no artificial additives, the metamorphosis of flavours and sugars takes place over a period of six weeks. With a free spirit, perry becomes quality. Our know-how combined with the still,
