In 1960, Christian Drouin père acquired the Fiefs Saint-Anne, a farm planted with cider apple trees in the Gonneville hills near Honfleur. With the help of Pierre Pivet, a renowned distiller in the northern Pays d'Auge, he spent the first twenty years distilling his cider and slowly aging his calvados, before marketing them for the first time in 1979. Produced the same year his grandson Guillaume began working at the distillery, this Sauternes barrel-aged version is resplendent with fullness. Under the influence of the sea air from the English Channel, its wonderfully saline palette of aromas and flavors also reveals noble scents and flavors of rancio and precious woods.

Nose : fine, fresh. Lovely aromas of baked apple, dried apricot, melon and beeswax fill an elegant, complex palette. When aired, grains of salt, cocoa powder and spices (cardamom, cloves) give it great nobility and depth.

Appearance : acajou

Palate : lively, dynamic. Rancid (cherry brandy) and exotic (guava, mango), the palate also reveals encaustic flavors (Emeri cloth, varnish) and others more tertiary (dry leaf, tobacco). Gradually, a fine layer of salted butter caramel coats the taste buds.

Overall : long, racy. Inviting us to savor a multitude of different apples, the tasting at this very moment evokes the time of picking. Both tart and juicy, it continues with flavors of tarte Tatin and apple pie. Later, the empty glass is slightly camphorated, chocolatey and finely wooded.
