Created in 1995, the Le Rocher distillery is owned by Bethel Romelus in the village of Pignon, in the north of Haiti. Its clairins are made with syrup from several varieties of sugar cane (Pete Koka, Canne Blanche and Madame Meuze). This Vieux Le Rocher 2019 - the distillery's first aged version - follows a project that is unprecedented in the history of clairin: ageing Haitian cane eaux-de-vie in a wide variety of casks to explore their incredible potential for future evolution. This initiative proved successful, leading Spirit of Haiti to go one step further by extending the ageing of the clairins in a tropical climate for several years, giving rise to the ‘Vieux’ editions.
Aged in a cask that had previously contained one of the pioneers of bourbon: Blanton's, this Single Cask has been bottled at its natural strength.
