TAKENO 2019 IN/EI Conquête

Takeno IN/EI is an exceptional sake from Takeno. This sake is like the image of the Japanese writer Junichiro Tanisaki who has left his mark on the world. The term "IN" corresponds to the crane and the term "EI" corresponds to the 5 wings of a yokai (an imaginary creature from Japanese folklore). In a sense, the producer wanted to create a sake that does not exist in our world.

For the production of this sake, the fermentation temperature is extremely low and it takes 1.5 times longer to be completed. The rice used is 100% Kameno. Takeno IN/EI has a very full texture with a very delicate acidity, while keeping a lactic sensation.

This sake is best enjoyed as a digestive. It goes perfectly with a grilled beef otherwise.
