Nose : Rich, heady. On the first nose, a rooty peat (gentian) takes centre stage, gradually taking on floral (iris), fruity (pear), milky (yoghurt) and herbal (tarragon, lichen) nuances. Allowed to breathe, very pure mineral notes and mineral salts (schist) appear on the surface.

Appearance : Or à reflets verts.

Palate : Full-bodied and creamy. The fruity (apple, white peach), vanilla and milky (coconut) attack reveals beautiful ashy and medicinal (mustard poultice) notes. Flavours of candied lemon, fresh walnut and acacia honey add colour to a lively and rich mid-palate.

Overall : Long, smooth. Backed up by a refreshing malty bitterness, the start of the finish makes way for a fermentary (malt beer), lush (green barley) and creamy after-taste gradually coated in notes of liquorice and dried peat.
