SHIRAISHI Tenguzakura 13 IMO

Founded in 1894, the Shiraishi distillery produces sweet potato-based shochus using the traditional method of fermenting the mash in a semi-buried jar. Owner and distiller Takashi Shiraishi has the particularity of growing his own sweet potatoes on small plots, without pesticides or fertilizers, to enhance the value of the Kagoshima terroir. The "Tenguzakura 13 imo" cuvée is a blend of 13 sweet potato varieties created by committed distiller Takashi Shiraishi. Located on volcanic soil in Kagoshima prefecture, he cultivates his sweet potato plots with a philosophy very close to biodinamy.
