Cavehill is the name of a cemetery located not far from the Rabbit Hole distillery in Louisville. It is there that the pioneers of bourbon are buried, who long before anyone else, experimented with aging their distillate in charred oak barrels, thus creating what we call Bourbon today. It is in homage to these men and women that we have named our bourbon.
Made from a unique mash that combines malted grains and corn, this premium bourbon combines richness and originality on the palate, giving it a character as rich as it is elegant.
The barrels are slowly toasted over a wood fire before being charred, a process that takes up to 20 minutes per barrel. This charring process extracts the sugars from the wood fibers, which mix with the distillate as it ages, giving our whiskeys unparalleled complexity and flavor.
As the bourbon matures, a small batch of up to 15 barrels is carefully blended to create the finished product.
As Cavehill settles on your palate, it evolves into notes of vanilla and custard.
70% corn, 10% malted wheat, 10% malted barley and 10% malted honey barley.
