Soil: albariza type, with a great capacity of water absorption and a predominantly calcareous composition, a type of soil that favors a good penetration of the roots to obtain the most diverse substrates, which are then transmitted to the wine.
Climate: Temperate climate, warm in summer and with a notable influence of the nearby Atlantic Ocean, both because of the west winds in summer and the frequent morning dews, which constitute a moderate but continuous supply of water for the plant.
Elaboration: The Palomino Fino grapes are harvested by hand and collected in small crates to avoid damaging the bunches. Then they go through a gentle pressing, followed by fermentation at a controlled temperature of 24 ° C. Once 11-12º of alcohol are reached, it is directed with liquor until it reaches 20º of alcohol. The generous wine, once fortified, is transferred to American oak barrels of 500 liters, where it ages thanks to the unique system of soleras. The special microclimate of El Puerto de Santa María, where our winery is located, favors a gentle oxidative aging, giving this wine its wonderful personality.
