The company was founded in 1911. Initially, the sake was called Sen Masamune, after the family's emblem, the cypress fan, but the name was changed to Shinano-nishiki, meaning the glory of Shinshu, in the hope that the sake would take a greater leap forward. Since its foundation, the brewery has had a tradition of using the best locally-grown rice, as it was a rice merchant before the company was founded. In 1967, the former head of the family, Koichiro Miyajima, invented Japan's first preservative-free sake brewing process, which was patented in 1972. Since then, the company has strived to produce products according to the brewing philosophy of "taste and peace of mind". Since 1991, all our sakes have been designated as sake with a specific designation, and since 2006, all our sakes have been brewed as junmai sakes.Shinano-Nishiki has brewed under the theme of "the expression of the great nature of Shinshu".We would be delighted if you could experience the great nature of Shinshu through our sake production. We look back at the history of sake brewing, from the development of preservative-free sake, through rice brewing and low-polished rice that uses whole-grain rice with care, to contract-grown rice, and we'd like to share our thoughts as an "indigenous brewery" on "sake brewing rooted in the climate of Shinshu" today.
