Nose : Both fresh and full-bodied. On the first nose, the center of the aromatic palette is occupied by rice grains of infinite sweetness. Then, gradually, a fine licorice bitterness covers the olfactory space. On aeration, fresh fruit (pear, mirabelle plum) and white flowers (lily of the valley, lily) precede grape scents evocative of a fine white Grenache. Citronella and orgeat aromas take center stage.
Appearance : or vert
Palate : Ample, dense. Pleasantly acidic, the attack reveals notes of starch and herbs (chervil, aniseed). Unctuous yet lactic, the mid-palate is refreshed by finely peppery white mint leaves. At the end of the mouth, rice grains of extreme voluptuousness spread across the palate. Finally, fermentative and cheesy flavors of great nobility of expression punctuate the second stage of tasting in a way that is both original and bewitching.
Overall : Long, velvety. Vanilla and milky (rice pudding), the start of the finish is remarkably verdant (eucalyptus) and leguminous (butter bean). These rare tones highlight a very salivating salinity (samphire, fleur de sel). The juicy aftertaste invites you to bite into bunches of perfectly ripe white grapes. Vanilla, almost chocolate, the aftertaste is impressively sweet and fresh. The empty glass is both lactic (yogurt, raw milk) and herbaceous (gentian liqueur).
