L'ENCANTADA 2002 Jamaican Rum Finish

Here is, after months a little confined..., our last born of the house... We decided to take the road of the sun of the islands... Direction Jamaica ! A 2002 Pouy estate in Tenarèze armagnac, a limestone terroir, an estate with armagnacs that are a bit high in degree.
Vincent, our cellar master, wanted something fruity, with character to match this Jamaican rum barrel with the characteristic scents of these hydrocarbon rums... The armagnac and the rum are playing a game of chase with the nose. Sometimes one, sometimes the other.
These oily, woody aromas, of very ripe bananas, a little vegetable, cut grass and then comes the sweet side, pineapple, apricot, mango... tobacco. After aeration, we think we recognize the violet, this old plum side coming straight from the native Tenarèze of the Pouy 2002 domain.
