This Takumi Shiko box contains 5 aged sakes (koshu) of 5 different vintages from different sake breweries: 1983, 1993, 1995, 1999. Selected vintages aged up to 30 years. The name "SHIKO" means "The Supreme", which means that these sakes aged from 23 to 40 years have a unique taste and nose.
Thanks to the aging technology, it is said that old sake already existed in the Kamakura era. Takumi is a premium brand that selects extremely rare and qualitative sake. Five brands have been selected with a long aging period for brewing.
1983 Iwanoi/Iwasé House in 1723/CHIBA: The 1983 vintage is the oldest of the first edition of the "Inishié no Bishu" series.
1990 Kizakura/Kizakura in 1925/HYOGO: Its advanced techniques have been awarded in many competitions, and it lays the foundation for making sake accessible to all.
1999 Fukumitsuya/Fukumitsuya in 1625/ISHIKAWA: The cool, clear water that takes 100 years to flow from the sacred Hakusan Mountain and the distinct climate of the four seasons contribute to the making of this sake.
Traditional techniques continue to evolve and the brewery focused entirely on Junmai sake in 2001.
1995 Aoi Tsuru/Inami House in 1889/HYOGO: A junmai sake carefully brewed for maturation, then stored at low temperature and matured at room temperature.
1993 Ume Nishiki / House of Umenishiki yamakawa in 1872: Junmai Ginjo, brewed in the same year that the former Toji received an award for excellence. Umenishiki Yamakawa is committed to selecting rice and water to produce a quality sake "Umenishiki". The brewer has been committed to making Junmai ginjo since the beginning and has more than 30 gold awards at the Annual Japan Sake Award.
