Founded in 1999, Hellyers Road has two stills, a 60,000-litre wash still and a 30,000-litre stainless steel and copper spirit still. Distillation takes place over 24 hours to produce a rich, smooth wash. With its remarkable depth of field, this venerable version radiates maturity. Not hesitating for a moment to wander back and forth into fruity, vanilla-flavoured, infused and herbaceous lands, its aromatic and flavour palette finally takes deep root in the Tasmanian soil from which it was born.

Nose : rich and mellow. A blend of malted barley, candied pear and coconut milk, the first aromatic notes are extremely well-balanced. As it is aerated, the scents of vanilla, acacia honey and candied lemon give it even more depth.

Appearance : topaze

Palate : sharp and refined. A perfect reflection of the nose, the range of flavours is peppery, rooty (ginger), greedy (flan) and herbaceous (hay, alfalfa). Gradually, grated ginger, green liquorice and acacia honey creep into every crevice of the palate.

Overall : long, palatable. Flavours of walnut husk, sage infusion and rice pudding steer the tasting towards ever greater freshness and deliciousness. This progression is confirmed by the presence of numerous fruits (mirabelle plums, pears, white grapes).
