Nose : Rich, concentrated. The salty yet earthy first nose is heady (lily, hyacinth), farm-yardy (bacon) and malty. Allowed to breathe, strong spices (black pepper, clove, curry) flood the aroma palette. Gradually, beeswax and heather honey fill the air.

Appearance : Vieil or soutenu.

Palate : Full-bodied, complex. The attack is medicinal, spicy (saffron, cardamom), oily (rapeseed, sunflower), rooty (gentian) and mineral (clay). Candied fruit and nuts (walnut, pineapple, pear), acacia honey and aromatic plants (verbena, sage) then play opposite flavours of chocolate and malt.

Overall : Long, dense. The earthy and salty start of the finish is also vanilla and rich (frangipane). A close reflection of peat, the end of the finish is camphoric, medicinal (arnica) and spicy (star anise). Samphire and artichoke hearts add a hint of smoothness to the flavour palette.
