FLAG SERIES 4 ans 2019 South Africa

The Flag Series range is a collection that celebrates exceptional bottlings of old rums from around the world. Carefully selected, it features emblematic casks from rum-producing regions that are distinguished by long ageing and a distinctive flavour profile. The Flag Series aims to highlight the specific characteristics of a producing country and the excellence of the distillates produced there. To make it easier to understand the subtleties of each product, the range offers transparent information on the identity of each bottling. The back label includes information such as the date of distillation, the date of bottling, the type of casks used and the number of bottles produced. The bottlings in the Flag series are ‘au naturel’, meaning that they are bottled without reduction, colouring or filtration.

This bottling was made with a local variety of sugarcane named Nkomazi and selected from a craft distillery located in the east of the country. The cane is untreated, unburnt, grown without fertilisers or pesticides, and hand-harvested throughout the year. Fermentation is slow, lasting between 7 to 8 days with selected yeasts, after which a natural fermentation takes over, extending up to 21 days. Distillation is carried out in pot stills, with each batch distilled individually and then blended. The distillery employs various cask ageing techniques, using barrels previously containing bourbon, South African whisky, or wine.
After two years’ maturation in a South African wine cask, it was finished for the same period of time in a second-fill bourbon cask.
